This cookbook has an amazingly comprehensive set of recipes for Latin American dishes. Beyond the wonderful recipes, it also gives a compelling and rich history behind the foods and specific ingredients. In my own home, I often find myself reaching for it when I'm itching to cook something new. Aji de gallina (pg 671) makes a frequent appearance at my dinner table, and you will always find Chimichurri (pg 132) in my fridge.
